Economics explain almost everything

Why does a light come on when you open the refrigerator but not when you open the freezer?

Without doubt we use the frigde much more often than the freezer and that is why only the fridge has a light while it's open. The extra cost of adding it into the freezer for most people won't be worth paying.  The manufacturers aren't interested in producing such equipment which has a light in both the refrigerator and the freezer because this won't produce any income.
So as you can see it's all about the cost of installing a light that switches on automatically when you open the door of this kitchenware.
